Our Spring Collection is a seasonal trio of naturally fermented British vegetables, guided by what’s growing well and tasting its best right now. Fresh, bright flavours designed for lighter days, longer evenings, and proper spring eating.

What’s inside:

Red Cabbage & Beetroot Sauerkraut

A vibrant sauerkraut made with British red cabbage and beetroot, naturally fermented with caraway. Crisp, earthy and beautifully balanced with gentle sweetness and tang.

Gorgeous alongside salads, roasted potatoes, grain bowls, cheese boards or piled into sandwiches.

Lacto-Fermented Parsnip Spread

A completely new one for us! sweet British parsnip, gently fermented with garlic into a savoury spread with subtle sweetness and rounded depth. I think of this one as a butter alternative.

Delicious on open sandwiches (use like houmous), with crackers,  or spread generously onto toast. I love this with marmite.

🥬 Lacto-Fermented Celeriac Remoulade

Our spring take on a classic remoulade. British celeriac and apple, naturally fermented with onion, mustard and herbs for a fresh, tangy, creamy-style ferment (without the dairy).

Perfect with smoked fish, eggs, salads, baked potatoes, picnic plates or straight from the pouch.
